Day 281 and 282 Enchilada Dreams

Yesterday was pretty much like today, fruit, vegetables, grains, beans, just in different combinations and on different plates. I'm so bored with being healthy, I wish I could have a giant plate of cheese enchiladas with rice and beans, and a large, fizzy full sugar Coke. After my unhealthy dinner, I would have a cigarette, maybe three, I would prop my fat legs on the table and yell at the waitress to bring me a plate of sopapillas and a Margarita, yeah that's the stuff of dreams. If I were on my way out or on death row or something, that's what I would order, can't think of a better send off. Maybe tomorrow I will find a new way to cook mushrooms and squash but tonight, I'm living in my head.

Day 231 Better Days Ahead

It's almost 5:00 and I'm in my office, at work on a Saturday, I have to believe that things will be better soon, whoops, spoke too soon, the mechanic just called  and we are at 100.00 just for today's diagnostics, internal engine damage and more testing on Monday, holy shmoley, I need to stop this train! My mom is coming to pick me up in a little while and I just want to go home to my beans and rice, this is not a good day. OK, right now, my dream of a better day includes sitting down to cheese enchiladas, chips and salsa, a big fat fizzy soda, and my very best friends in Indiana, we're eating, we're laughing, my car is running flawlessly, and I am happy to be near the people I love the most. That is my happy place. In my real world, I'm going to take a really deep breath and just keep moving forward, things will get better!

Day 159 Fudgecicles or Sprinkles

It was a good thing I had a hearty breakfast because today was a day for nerves of steel. I started out with eggs with spinach and some fried taters, which got me through to lunch, where a kind co-worker, shared her bounty of white chicken less chili. The chili was damn good, so good, I have to say it again, damn good. I'm going to make said chili at some point in the future, when all of this audit business is behind us. For dinner, I made some lovely cheese enchiladas and Spanish rice, OK I didn't "make" the Spanish rice, it was an already made grocery store item, but it was delicious none the less. It tuns out, I really had no need for the nerves of steel, I fortified myself with this morning, because the families, we work with had nothing but kind words to say to our auditors, they were wonderful and now I can safely put this part behind me. Tomorrow, they examine our files, not too worried though, we've all worked really hard to make them spectacular, and afterward, I plan on having ice cream to celebrate either way. Ice cream from the grocery of course, but ice cream none the less. Depending on how our outlook is at the end of the day, I may add sprinkles or we could go in the opposite direction, if we lose our funding, I'll buy a dollar box of fudgecicles and start looking for another job. Here's hoping for the sprinkles.

Day 36 Monster Trucking To The Market

I have come down from the mountain and the world looks a mite different than it did a week ago. Thanks to global warming and the mayor's confusion over how to move snow from one place to another, there is still a lot of it and most of it is between me and the market. Today, my family drove 25 miles in their ginormous, snow slaying, pansy car squashing, monster truck to take me to the grocery store and once again I have enough food to keep myself kicking for another week. The shelves weren't fully stocked and there were limits on what one could buy, but I managed to get a few things, I'm looking forward to. Tonight, I'm making a favorite for myself; I really miss eating in my preferred Mexican restaurants during this year long challenge, so I'm making cheese enchiladas with guacamole and rice, YUM!  I'm hoping these avocados don't make me cry like the ones from last week, such a tragedy, they were moldy, when I cut them. I was so looking forward to them, I almost scraped the mold off, but my fear of Botulistic Shagalosous held me back and ration prevailed, no amount of lime was gonna freshen those precious, dead avocados. More snow is coming in the next few days and I am going to get creative with some beans, how creative you ask? Creative enough to blow your hair back, my friends, it's gonna be a windy week here on the plains! Also, this week, in honor of an old friend and a tragic break-up, I'm making dump cake, say so long to the past, eat some cake, and move on!
