Day 259 Umm, Who Ate All The Bread?

Today, I haven't even left the house and I've been applying the feed a cold saying to my present blahness. I have actually used all of the dishes in my cabinet, in between naps, I've been eating the day away, I've had peanut butter and jelly sandwiches, black bean chili, veggie dogs, Jello, avocados, chips and salsa, and grilled cheese! I think it helped, I'm feeling a little better. Tomorrow I have a work thingy, where there will be real pizza but I will not be participating in that chow down, I probably ate enough to sustain myself for the winter. I guess now, I'm off to the kitchen for a last cup of hot tea and then off to sleep the rest of this cold away, gotta get ready for laser tag tomorrow!

Day 254 and 255 J-E-L-L-O

Woo hoo! I have my car back, and If I hadn't just handed over all of my money to the mechanic, I could drive to the grocery store anytime I want. I did actually go to Whole Foods on the way home and bought spring rolls and tofu for dinner. I love being free! I love my pre-set radio stations, I love my vanilla air fresheners, I love turning the key and actually rolling! Today is a good day, I was feeling lazy last night and had peanut butter and jelly for dinner, not too exciting. This morning, I went to my mom's and she made me a fried egg sandwich with the fresh eggs, my aunt collected, it was delicious and filling and got me through pretty much most of the day. Tonight, I'm contemplating Jello and the time it takes to set up in the fridge, two or three hours probably, I don't know if I have that kind of time, I'm kind of an instant gratification type of girl. Tomorrow is mucho busy, lots of stuff, all to be done before 9:00, probably no time for breakfast, unless it's the Jello, is that legal, jello for breakfast? I deem it so, Jello it is.

Day 232 A Good Day For Jello

Today has been a good balance of productivity and relaxation, I caught up on work, read a little fiction, made some egg salad, went for a swim, took out the trash, took a nap, and now I'm eating jello. I'm attempting to shift my perception of life today and for the most part, I think that it's working. I made a list of things to do this week, made a budget, and shifted some clothes to the donation bag, and took the time to meditate this morning, I think this is going to be a really good week. I am certain that my car situation is under control by my higher power and I'm choosing not to worry until it's time to worry. Now, back to the egg salad, I love egg salad more than any other sandwich accoutrement and I do believe that this is the best egg salad ever made, even better than the stuff I made the other day. I used of course eggs, seven of them and I added mayo, mustard, and because I was out of relish, rosemary infused banana peppers. I'm telling you the rosemary made it perfect, I highly recommend it. Here's hoping this is the best week on record.

Day 102 Food Baby Rents Space In My Belly

Today, I had the best lunch and plenty of time to eat it, which is a really great combination. Even though I ate a really, really lot, it was all healthy stuff, I had broccoli and guacamole and an Amy's veggie burrito. Although Amy's is healthier and vegetarian than say Taco Bell, it's downfall was the price. 2.69 for one burrito. It was so good, but I'm a little ashamed of myself for not making another round of beans for a few cents really, and creating my own burritos again, because that's essentially what I ate anyway. I also had jello, I don't really even like jello and it is made from the gelatin in horse's hooves but It was just so red and shiny and refreshing, I had to have it. Oh, I almost forgot, I also finished scraping the icing off of my 100 day cake, which was uber satisfying and sugary, so sugary, I almost fell asleep at my desk from the sheer joy and insulin-ness of it all. OK, so it wasn't all healthy, I gotta do better, but I'm still on the wagon as far as my mission goes. This weekend, I'm going to make my brother a cheesecake, because he was accepted into the National Technical Honor society and I am super proud of him, he deserves something fabulous and cheesy!
