Day 314 Lucky Me

Today, I found out that my car is only going to cost another 250.00 or so to fix and lucky me, it's going to be a Christmas present from my parents. I was off work today and stuck at home due to lack of transpo, so I got my nap time on and later made some sweet potatoes, Brussels sprouts, and sweet corn on the cob. That's good eats right there. I've been looking at recipes for Thanksgiving and Christmas and found a cake that I mentioned a long time ago but never made it. It's a Cassata cake, or a Ricotta cake, made with marzipan and jeweled fruit. It's so pretty, it would make a great Christmas potluck cake for work. I'm also thinking of roasting some vegetables with chestnuts, I want to do something different and special, because green bean casserole is good, but not very festive. If anyone has any good holiday vegetable recipes, let me know, I'm open to the weird and the never seen.

Day 288 I Rock A Pot Of Soup

Today, I have decided on my new challenge for 2012, but I cannot tell you just yet, I will say that it will be huge! It will be much bigger than 365 days sans fast food.....don't you wish you knew? Tonight, for dinner, I decided to go a new route with the brussell sprouts and I'm making soup, generally I'm not a soup girl but I'm running out of ideas for my favorite vegetable. I added sprouts, squash, and sweet potatoes to potato leek soup. I'm not really sure what a leek is, but I'm OK with that as long as it is not related to the beet family. I'm calling it So Long Summer soup because I'm so happy that Fall is almost kind of here. Oh my, how do I type and slurp sunshine at the same time? My momma would be proud, because I rock the cool weather soup, really someone besides me should taste this!

Day 73 This Pizza Needs A Diagnosis

Tonight, I am using my cousin's suggestion for a black bean pizza, well, I started with black beans and it has become something much much bigger and weirder with my additions and ideas about what it's supposed to be. Like I said, I started with refried black beans instead of pizza sauce, I just didn't think the two would go together. I added Serrano peppers, red bell peppers, onions, sweet potatoes, and cheddar cheese. The sweet potatoes are very, very small don't judge. So, it kind of started out a little bit Cuban but then I added mushrooms and olives and it lost all evidence of nationality. It's a very confused pizza in the midst of an identity crisis, but I'm pretty sure it's going to be really good. I'm counting on edible product, as tomorrow I will be in an all day training and am bringing my very special lunch. This experiment can get a little awkward during times like these, when everyone decides on a dime to have a working lunch at the Mexican restaurant across the street and I have to politely explain, that I'm not able to join everyone else. I'm not whining, I chose this ludicrous plan and I must stick by it. So, as I was saying, if I bring a fabulous lunch, I can just say, OH! Sorry, I have this fabulous lunch here, wouldn't want to waste it, see you suckas later. See, that's how it's done, take notes and apply to your own lives, my pizza is done, so buzz off while I eat.

Day 27 A Tale of Two Taters

First of all, let me just say that, the cauliflower "potatoes" the other night did not work out as well as I had hoped. They were neither delicious nor amazing, no sort of miracle took place with the first bite, they were simply OK, even festooned with cheese and butter. I'm sure there are many more useful and fun ways to eat cauliflower, making it into something it's not is just unfair, both to the cauliflower and to the eater of the lie. Tonight, I am once again on a potato kick and am baking a big fat sweet potato, which I am going to cover with onions, sauteed mushrooms, and Cheddar cheese, a real po'tater! I am also on the hunt for a Russian Blue potato, I saw one on the Washington State Potato Commission website and am now on a one eyed mission to make fries with it. If I am unable to locate said blue potato, I wonder if the Potato commission will send me one to plant!?!
My challenge of the day, was an optical illusion of some sort, I went into what I believed to be a gas station, only to discover a Daylight Doughnuts. I calmly purchased a water, while being assaulted by the sight and smell of angelic flaky pastries, I watched doughnuts placed lovingly into boxes, surely headed for unworthy mouths and hips. Once again, I summoned my steel plated will and walked away pure and doughnut free.
