Day 245 Breaking Out The Squash Stash

Today, I have done nothing and I mean......nothing. I watched part of a movie, read part of a book, ate a peanut butter and jelly sandwich, turned on the dishwasher and that's about it. I'm trying to conjure up creative things to do with freezer squash from the garden, green beans, and baking mix. I have a little bit of oil left, so I guess I could use the baking mix to fry the squash and have some green beans and pasta made with garden tomato sauce? Ya that sounds pretty good, I cannot wait to have my car back and to get to get past this pay period, where every cent went to two stupid head gaskets. I'm looking at this as a good opportunity to re-focus my food challenge energy for a turbo boost at the end. My mom says yesterday how she couldn't wait for this thing to be over so that we could go to Cherry Berry for frozen yogurt, I'm with ya ma! One thing I have decided not to go back to is soda, it's like I've finally kicked a nasty habit and January 1st will be my out of soda rehab day, so I'm saying hells no!

Day 187 Help! I'm Underneath This Pile Of Squash!

Here comes the squash! We have been eating baby squash for about a month now, because the idea is, that the more you pick, the more will grow on the vine and the past few days have proven that theory. We have so much squash that we are picking it daily and giving it away. I have squash in my freezer, in my refrigerator, and sitting on the counter in the kitchen. My mom is giving it away to people at church and I'm looking for new recipes to process it! Yikes! We also have an avalanche of tomatoes, so salsa is coming very, very soon! I recently found a recipe for tomato pie, I may try out in the next few days or so and I'm thinking about stuffing a squash just for something to do. I'm so excited about putting stuff away for Winter, I can make all kinds of cold weather stuff with squash, if I don't get sick of it first. I love squash, but that doesn't mean I want to eat it every single day. Just good to know it's there in case I ever reach a starvation point. Here's hoping my stash of garden goodness will not be needed for nuclear winter nourishment.

Day 161 The Peppers Are Poppin'

So today, I took the day off in order to work in the office, I know that doesn't make sense. Where I work I have to use a personal day if I want to get paperwork done or have an "office day". If I don't, I am expected to reach a productivity goal, so I took a personal day. During my "free time" today, I contemplated the dilemma of my work sponsored celebration and the fact that it's in a restaurant. When it comes down to it, I will know that I did not complete my mission, at 364 days instead of 365. At this point, I am not going to eat with my team, but I will go with them and will at least get to participate in the games and stuff. Things may change in the next few weeks or so, the outing is July 1. but as of now, this is my decision.
I don't have much in the works tonight, just going to read a book I found at the used book store and perhaps have some mashed potatoes in a while. Tomorrow, I'm going to pick up our first squash and pepper pick, at my mom's. She says that the cayenne peppers are popping out and the squash are a little small, but this is just the beginning. She says, the more you pick, the more will continue to replace them, so I may be having squash for dinner tomorrow! Depending on how many peppers, I have, I may make salsa before the weekend is over, woo hoo!
