Recipes



This collection is a work in progress and contains food and a few home remedies.  I think that if  you want to succeed in eating healthier and not eating so many of your meals out, you have to have something at home that you look forward to cooking and eating. I could never do this if I had to look forward to a big fat bowl of carrots every night. These are some of the things that have kept me from throwing this whole project in the garbage. Also, all of my recipes are vegetarian, so feel free to add some cow or chicken, if you please. Enjoy!


Guacamole


I think that Avocados are one of the most perfect foods ever created, lot's of health benefits and it's so easy and yummy to make guacamole. Here's how you do it:


Find 3 or 4 ripe avocados (kind of soft, when squoze)
Scoop out the avocados and squash them up a bit.
Crush 1 clove of garlic and add to the avocados
Add the juice of 1/2 a lime to the mix
Add a little salsa, mix it up and enjoy!


Squash Casserole


1 Butternut squash
1 yellow onion
2 tablespoons of butter
1/2 cup of shredded cheddar cheese
Peel and cut squash into chunks and boil until soft
Squash the squash and mix with chopped onion, cheese and butter
Bake for about 30 minutes at whatever temperature melts the cheese


Mushroom Stroganoff
1 can Cream of Mushroom Soup
2 pounds mushrooms
olive oil
1/4 cup red wine
2 cloves garlic, chopped
fresh or dried parsley

Sautee mushrooms and garlic in oil, add soup and wine Pour mixture over mushrooms. Heat then top with parsley.
Serve your mushroom stroganoff over rice or pasta.


Greek Pizza
1 pizza crust of your choosing
Feta cheese
Olives (any kind will do but it's Greek pizza get the purple pitted ones)
A can's worth of crushed tomatoes or fresh ones minus the juice
Mushrooms
Olive oil
Garlic


Drain the tomatoes really well, on a paper towel if you must and use them as the base, as you would use sauce....or use sauce if you're going to be a big baby about it.
Add the mushrooms, chopped garlic, cheese, olives, and whatever else suits your delicate tastebuds.
Sprinkle a little olive oil and bake the pizza until the feta is meltyish.


Very Hot Red Curry Rice and Vegetables


Rice
Red Curry paste
Mushrooms
Asparagus
Onions
Whatever other vegetables you like (these veggies came in a frozen vegetable mix)
Cook the rice according to directions
In a small amount of water, cook the vegetables and add the curry paste to the mix
When the vegetable are cooked and coated, add the mixture to the rice.
Note: The Curry paste is very hot, add a small amount unless you know what you're doing, it can very easily become inedible. You can also add coconut water to the rice to cut the heat a bit.


Portabella Blue Cheese "Burger"


Portabella mushroom caps
1 red onion
Olive oil
Crumbled Blue Cheese
Sandwhich buns
Drizzle the mushroom caps with olive oil, slice red onion and drizzle as well.
Sprinkle a little Blue cheese on the mushroom caps
Broil, until the musrooms are juicy and the cheese is melty.
Add the onions and mushrooms on a bun and eat!


Portabella Quesadillas


Corn tortillas
Shredded Colby Jack cheese
Chopped onion
Portabella mushrooms, diced
Cooking spray
Spray each tortilla with cooking spray, add cheese, onions, and mushrooms, layer, bake until the cheese is melty.


Russian Borscht


3 beets
1 red cabbage
2 chopped tomatoes
1 red onion
1 potato
1 clove of garlic
1 Qt. of water
Olive oil


Dice the beets and boil until tender, add potato and boil for about 15 minutes, chop cabbage and add to the pot. Chop onion and garlic and sautee in olive oil until brown, add to the soup. You can also add sour cream to the borscht before eating.





Sweating Tea for Cold and Flu


Juice of 1 lemon
2 cups of water
1 inch of fresh Ginger root
½ teaspoon of cayenne
1 bag of black or green tea
Honey to taste
Grate the ginger root and steep all ingredients except honey for 15-20 minutes, strain, let cool and add honey. This concoction can be used at the onset of illness and will cause sweating to break a fever. You can also add a tablespoon of crushed garlic for added immunity if you wish.


Heart Attack Tea
½ tablespoon of Cayenne powder in one cup of hot water
After calling 911, make this tea quickly to stimulate blood flow. This is believed to sometimes stop a heart attack in the beginning stages.
